    Abstract
    Dodol merupakan salah satu makanan khas daerah Jawa Tengah yang hingga kini masih popular di kalangan masyarakat. Permintaan dodol meningkat terutama menjelang hari-hari besar di Indonesia. Proses pembuatan dodol memerlukan waktu 6 hingga 8 jam diaduk terus menerus secara manual oleh satu atau dua orang operator. Dengan semakin meningkatnya permintaan, telah banyak diciptakan mesin pengaduk dodol untuk mempermudah pekerjaan manusia dalam memproduksi dodol. Elemen paling penting pada mesin pengaduk dodol adalah jenis pisau pengaduk yang digunakan apakah dapat mengaduk adonan dodol secara merata atau tidak. Untuk mendapatkan solusi mengenai jenis pengaduk yang paling tepat digunakan padak mesin pengaduk dodol, dilakukan penelitian mengenai perbaikan mesin pengaduk dodol dengan uji coba menggunakan tiga jenis prototype pisau pengaduk. Hasil dari penelitian menunjukkan pisau pengaduk jenis pitched blade paddle berdaun pengaduk dua buah dengan kemiringan 30o dapat mengaduk adonan dodol secara merata dan menurunkan waktu proses produksi menjadi 4 jam. Dodol is one of the tipical foods of Central Java which is still popular among the people. Dodol demand is increasing especially ahead of Indonesian’s big days. Dodol production process takes 6 to 8 hours stirring continuously and manually by one or two operators. As demand increases, there are many dodol stirrer machines have been created to help human work easier. The most important component in dodol stirring machine is the type of stirrer blade used. To obtain a solution about the most appropriate type of stirrer used in dodol stirring machine, a research about the improvement of dodol stirring machine by conducting trials using three types of prototype stirrer blade is developed. The result present that the pitched blade paddle with two 30o leaf stirrer type can stir the dodol dough appropriately and decrease the production process time to 4 hours.
