At the period of this time the press out mother's milk (ASI) saved in the refrigator represent the best solution to laboring mother's to be they earn remain to give the exclusively mother's milk for their baby. Exclusive mother's milk represent the supported of optimalization growth of intelegence of baby brain, because mother's milk containing all vitamins of required by baby. So a research about difference of protein in fresh mother's milk which is saved in the refrigator has been done to know the protein rate in a fresh mother's milk which is saved in the refrigator difference have of a meaning. This research is a quantitative analysis done by using Kjeldahl method to determine the number of nitrogen in the mother's milk. There's only 10 mL of sample taken for the research. Then it was analyzed by using Kjeldahl method through destruction phase and using strong acid with K2S04 and HgO functions as catalyst which can speed up the reaction (chemical process). The destruction resulted clear solution which is distillated afterward by using reverted cooler. Next it is titrated by using alcalist. After thatthegrade of nitrogen determined in every sample. The result of analysis indicates that fresh mother's milk consists of protein as well as in mother's milk saved in the refrigator. The result of protein rate from fresh mother's milk and mother's milk saved in refrigator in % b/v is 1,69±0,01 (Fresh mother's milk); l,61±0,03(Day first of mother's milk); 1,57±0,02(Day second of mother's milk); 1,57±0,03(Day third of mother's milk); l,56±0,01(Day four of mother's milk); 1,54±0,02(Day five of mother's milk); l,54±0,02(Day six of mother's milk); 1,42±0,02(Day seven of mother's milk). The result of one-way ANOVA statistical experiment indicates that the grade of protein between fresh mother's milk and that is stored in refrigator has significant difference. The longer it is stored in the refrigator, the more lower protein contents it will have.en_US
