| dc.description.abstract | Food problems should receive special attention in the implementation of overall health. How to obtain the food and drink that meets the health requirements is by monitoring the hygiene and sanitation. Coliform, E. coli, faecal coliforms in food and drink is indicator contamination from handling the food and drinks that are less good. This study aims to determine the conditions of hygiene and sanitation of food in the school cafeteria of Universitas Islam Indonesia and analyze the presence of E. coli bacteria on cooked food, raw food, cookware, food handlers hands, drinking water and clean water in 2 cafeteria of Universitas Islam Indonesia. Samples in this study was taken from FTSP caftaria and Terpadu Cafetaraia. Samples in this study was taken from two cafeteria at FTSP canteen and Terpadu canteen. In the cafeteria Terpadu sample taken from the kios A, kios B, kios C, and kios D. Further observations and bacteriological examination to determine the quality of sanitation. The results of observations of physical conditions cafeteria, shows the condition (kiosk A) has the lowest value (67.2%). Results interview knowledge of food handlers hygiene and sanitary conditions in the canteen Integrated (kiosk B) has the lowest value percentage (46.4%). The results of the questionnaire responses of consumers show female respondents had the smallest value, ie with a percentage of 40% in the cafeteria FTSP and a percentage of 57.1% on the Terpadu cafeteria. E.coli testing results showed all samples in each cafeteria showed negative results. Based on these results it is known that the physical condition of the cafeteria and knowledge of hygiene have a relationship and influence on the amount of coliform bacteria on food sold. | en_US |
