This study, entitled Human Resources Skills Development on Employee La Pergola Italian Restaurant in Yogyakarta. The purpose of this study are: 1) To know the process of the development of skills in the restaurant industry in La Pergola Italian Restaurant. 2) To determine the learning effort chef at La Pergola Italian Restaurant. 3) To know-hand the challenges faced in developing the skills of the chef at La Pergola Italian Restaurant. This study is a qualitative research approach to the case. This study uses data collection methods are interviews, observation and documentation. Speakers contained in this research is Agus, Wisnu, Andre, Wulan, Feri, Triyanto, and Heru as a cook and cook helper. To determine the validity of the data used to test the credibility of the data or confidence in the data. Methods of testing data using the triangulation and member check. Methods of data analysis using data reduction, a data display, and conclusion drawing. From this research it is known that the seven employees consisting of three cooks and four cook helpers experienced chef cooking skills development. They were given training of Adelio in the form of directives, insight and knowledge of Italian and Spanish cuisine menu. Adelio is a recipe maker, tells how to prepare Italian dishes and the Spanish right, share experiences and share knowledge. Given the post-recruitment training, further developing their own every day when cooking. In addition to learning Italian and Spanish cuisine menu, they also learn the Italian language is self-taught, in addition to learning Italian and Spanish cuisine menu with a referral from a friend Adelio is the owner of La Pergola who came from Italy to provide direction step by step. If when you cook yourself in trouble, they ask each other to each other, that is where the learning process takes, the learning process happens every day. A need to study the language, product knowledge of Italian, especially for those who do not have basic education, only have basic work experience.
